  • 1 red pepper
  • 4 cloves of garlic

  • A pinch of sea salt
  • A pinch of cane sugar
  • 1 tablespoon extra Virgin olive oil

Manufacturing

  • First crush the garlic, and set aside.
  • Then cut the peppers into small pieces and fry them in a frying pan.
  • Next, wash and chill the tomatoes.
  • Then put the tomatoes through a meat grinder or use them in a blender. You can also dice them if you want tomato pieces in your sauce. 
  • Put the fried peppers and tomatoes in a large saucepan. Put on low heat.
  • Then add spices, sea salt and sugar.
  • Next, allow to cook for 45 minutes. 
  • Just before removing from heat, add the crushed garlic.
  • You can use the sauce in the blender so that there are no pieces of pepper left in it.
  • Experimental. If necessary, you can add more salt or other spices.
  • If you want to add a touch of flavor and volume, you can add other vegetables  (onions, green peppers, zucchini, eggplant, etc.) and other spices and aromatic plants (such as oregano, bay leaves, cumin, curry, etc.)
  • Finally, let the sauce cool and it is ready to be used with a variety of foods. The sauce is suitable for rice, pasta, vegetables, fillings, etc. 

How to store it

  • You can store the sauce in airtight glass jars.
